Kerry has released A global flavour chart for 2024, called A World of Future Tastes, which provides a snapshot of flavour trends across 13 different regions, including Europe, the US, Canada and Latin America. This flavor trend map covers sweet and salty snacks, hot and dairy beverages, cold and soft drinks, nutrition facts and culinary trends.
These trend maps track flavor adoption and evolution around the world, providing an in-depth analysis of the ingredients and trends that will shape innovations in the restaurant industry in 2024, as well as those that inspire product and menu developers worldwide.
For example, Kerry researchers explored the life cycle of orange and chocolate flavors, exploring their diverse product offerings across the globe. These case studies show how traditional flavors can be incorporated into new apps as developers around the world combine flavors and spices from elsewhere.
"With the global communication and spread of flavours through social media and travel still in its infancy, the globalisation of food, drink and culinary developments is making this a truly exciting time for the industry," said Soumya Nair, Director of global consumer research and insights at Kerry.
"While rapidly changing times present great challenges, they also provide unparalleled opportunities for brands to capitalize on emerging trends. We see many unique flavor intersections in food and beverage, and Kerry is using technologies such as natural language processing, artificial intelligence, social media and traditional consumer observation tools to help customers navigate emerging flavor trends for products developed in 2024."
Several notable trends can be seen in this year's trend graph.
The creative fusion of international cuisine is increasing. For example, Filipino and American dishes are merging, leading to innovations on the menu such as Halo-Halo-inspired cocktails, burgers and adobo (a dish from Latin America, the Philippines and elsewhere, originating in Spain) chicken sandwiches.
